So, today was Nicki's field trip to Shady Lakes. This was her first time to go fishing and she caught a beautiful rainbow trout!!! ... Which she BROUGHT HOME!!!! LOL
I drove to the bus stop to pick her up today, thinking that she would be pretty darn tired after her fishing trip and when I went to put her backpack in the trunk and she yelled, 'Mom! Wait!!!' I said, 'What is it?" And she said, 'I have a fish in my backpack!!!' I think at that moment, my mouth dropped open and my eyes were as big as saucers! I said, 'you have a what? A REAL fish in your backpack?!' She said, 'Yeah! The one I caught! It's a rainbow trout! Guess what we're having for dinner?!'
So, when we got back to the house, it was true... she really had a REAL fish in her backpack... A real fish, with it's head, tail, scales and bones still on/in it.
Looking at me, mockingly... saying 'Are you really gonna do this?' I accepted the challenge... after I got my girlie squeals out of the way from touching it... I chopped it up and managed to get 4 little bitty pieces without bones in them. I put them in an egg wash, then into cornmeal and into the fryer. 'Frank' the fish, was actually pretty tasty.
Thank goodness that trash comes in the morning though! LOL :-)

OMG What a good mom you are! NO WAY would I have been able to cut the head off and skin it!! But WTG Nicki!
